Method
- Heat olive oil in a deep pan.Brown meatballs properly until golden and caramelised.Remove and set aside.Little cheat for beginners: Leave them alone longer than feels correct, that golden crust = flavour.
- In the same pan:
- add onion
- knob of butter
- pinch salt
- pepper
- Italian herbs
- optional chili flakes
- tiny pinch smoked paprika
- Pour in the vodka sauce.Add:
- handful parmesan
- another small knob butter
- Finely chop a generous handful of basil.Stir most of it through the sauce right at the end so it stays bright and fresh.Save a little for serving.
- Cook spaghetti in well-salted water until al dente.Reserve some pasta water before draining.
- Add spaghetti straight into the sauce.Toss with:
- splash pasta water
- extra parmesan
- tiny knob butter
- Top with:
- dollops of ricotta
- torn mozzarella
- parmesan
- fresh basil
- cracked black pepper
