This is the loaf I make on a quiet Sunday when the bananas have gone past polite. It’s a one-bowl, no-fuss bake. A little honey keeps it beautifully moist for days (if it lasts that long).

Golden Banana Bread
Moist, honey-gold and full of ripe banana, the easiest one-bowl loaf for using up the speckly bananas in the fruit bowl.
Ingredients
Method
- Heat the oven to 170°C (150°C fan) and line a 900g loaf tin.
- In a large bowl, mix the mashed banana, melted butter, sugar and honey until combined.
- Beat in the eggs and vanilla, then gently fold in the flour, cinnamon and salt until just combined — do not overmix.
- Pour into the tin and bake for 50–60 minutes, until a skewer comes out clean. Cool in the tin for 10 minutes before turning out.
Notes
Lovely with a handful of walnuts or dark chocolate chips folded through.
