This is the loaf I make on a quiet Sunday when the bananas have gone past polite. It’s a one-bowl, no-fuss bake. A little honey keeps it beautifully moist for days (if it lasts that long).

Golden Banana Bread

Moist, honey-gold and full of ripe banana, the easiest one-bowl loaf for using up the speckly bananas in the fruit bowl.

Ingredients
  

  • 3 very ripe bananas mashed
  • 125 g butter melted
  • 120 g brown sugar
  • 2 tbsp honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 250 g self-raising flour
  • 1 tsp ground cinnamon
  • 0.5 tsp fine salt

Method
 

  1. Heat the oven to 170°C (150°C fan) and line a 900g loaf tin.
  2. In a large bowl, mix the mashed banana, melted butter, sugar and honey until combined.
  3. Beat in the eggs and vanilla, then gently fold in the flour, cinnamon and salt until just combined — do not overmix.
  4. Pour into the tin and bake for 50–60 minutes, until a skewer comes out clean. Cool in the tin for 10 minutes before turning out.

Notes

Lovely with a handful of walnuts or dark chocolate chips folded through.
